After being diagnosed with endometrial cancer in 2012, I read Eat to Live by Joel Fuhrman. And, he spoke of 15 different cancers being on the rise and attributed it to the ingestion of animal products. Yes, mine was one of the 15. I promptly stopped all animal products and dropped 30 pounds. Three years later, I am cancer-free. I have kept off the weight. And, I feel great! Because of the vegan lifestyle choice I made, it was difficult for the members of my church family to prepare meals for me during my recovery. My goal is to help people get healthy and embrace a vegan lifestyle. Though I have reintroduced fish and eggs in my diet, vegan eating is a huge influence in how I eat and prepare each dish you'll enjoy!
